The holidays are over and back to healthier eating. Starting off the new year with this Greek Yogurt Parfait with homemade Berry Jam. In the parfait, greek yogurt,Berry chia seed jam, honey nut granola)

Only takes 20 minutes to make and tastes amazing!

Blackberry Chia Seed Jam

Note:

1.The jam will keep in the fridge for up to 2 weeks.

2.the jam can be sweetened with honey, agave, or another sweetener of your choice.

3.You can also freeze the jam in an air-tight container.

Ingredients:
1 cup fresh blackberries
1 cup fresh blueberries
2-3 tablespoons agave syrup (depending on how sweet you like it)
3 tablespoons chia seeds
½ teaspoon vanilla extract (optional, I chose not to use it)

Directions:
1. In a medium-sized pot, bring the berries to a low boil, stirring frequently. Reduce heat to low and simmer until the berries soften, about 5 minutes. Lightly mash the berries with a the back of your stirring spoon. I prefer to leave some berries in chunks for texture.

2. Stir in the agave syrup and chia seeds. Cook the jam on low until it thickens, about 5-7 minutes. Make sure you stir the jam so it doesn’t sitck.

3. Remove the jam from heat and stir in the vanilla extract (optional). Let jam cool to room temperature. Pour in a glass jar or air-tight container and store in the refrigerator.
