Recipe: Creamy One Pot Butternut Squash Soup

Craving something cozy? Only soup will do in the dead of winter when temperatures drop. Warm up and kick back with a steaming bowl of get in my belly creamy butternut squash soup.

I’m going to let you in on a little secret, bring it in. Soup is actually pretty easy to make, and this particular recipe is made in one pot and ready in 30 minutes!

CREAMY ONE POT BUTTERNUT SQUASH SOUP

Prep Time: 10 minutes

INGREDIENTS

  • 4 slices bacon, chopped into thin matchsticks

  • 1/2 medium sweet Vidalia onion, diced

  • 3 cloves garlic, minced

  • 4 sage leaves, finely chopped

  • 3 sprigs fresh thyme, stems removed

  • 1 (2 1/2 pound) butternut squash, peeled, seeded, and cubed

  • 3 large carrots, cut into 1-inch pieces

  • 1 stalk celery, cut into 1-inch pieces

  • 1 Granny Smith apple, cored, peeled and chopped

  • 4 cups chicken stock

  • 1 teaspoon Kosher salt

  • 1/2 teaspoon freshly ground black pepper

  • 1/3 cup heavy cream

  • 2 tablespoons chopped fresh chives

INSTRUCTIONS

  • Heat a large pot over medium heat. Add bacon and cook until crispy, about 6-8 minutes. Transfer to a paper towel-lined plate and set aside.

  • Add onion, and sauté, stirring frequently, until translucent, about 2-3 minutes. Stir in garlic, sage and thyme until fragrant, about 1 minute.

  • Add in butternut squash, carrots, celery, apple, salt, pepper, and chicken stock, (You might need to add a little more or less stock, depending on the size of your squash. The liquid level should be just slightly lower than the squash)..

  • Bring to a boil over medium-high heat. Turn the heat down to medium-low, add the lid to the pot and simmer for about 20 minutes or until the butternut squash is fork tender.

  • Remove the soup from the heat; Uncover and stir in heavy cream. Using an immersion blender puree until smooth and silky.

  • Serve sprinkled with bacon bits and chives.

Recipe: Grilled Mushroom Ricotta Sandwich

Grilled Mushroom Ricotta Sandwich

INGREDIENTS 

  • Kosher salt⁣

  • 1 small onion thinly sliced

  • 4 mushrooms thinly sliced

  • 1 tablespoon extra-virgin olive oil⁣

  • Oregano to taste

  • Ricotta cheese

  • 2 slices of crusty bread (sour dough, whole wheat)

INSTRUCTIONS

  1. On medium- high heat sauté your sliced mushrooms, a small sliced onion, some salt, pepper, and oregano in some EVOO and cook that down until the onions are soft and the mushrooms are golden (about 5 -7 minutes) pour into a bowl and set aside.⁣⁣

  2. Wipe down the pan and toast two slices of crusty bread (sourdough, whole grain etc) and lightly butter one side of each slice of toast. ⁣⁣

  3. Place the buttered side down top with a few generous scoops fresh ricotta cheese, top with the sautéed mushrooms and onions, cap it off with the second slice of toast (buttered side out. ⁣⁣

  4. Place on the hot pan and grill for a minute, flip, and cook for an additional minute. ⁣⁣

  5. Remove from the pan, cut in half. Take a giant bite and let the excess spill out and down your face. Don’t worry I won’t tell if you won’t 😉

Recipe: Lite Balsamic Vinaigrette

I love a good balsamic vinegar and if I could I would add a little into every dish I make. ⁣

The slight sweetness you get from the juice of “grape must” (in Italian, “mosto”), or the hint of oak from aging the “mosto” in wood barrels are the reasons I can’t get enough of it. ⁣

Recipe: One Pot Spicy Sausage Penne

Well hello you sexy bowl of Spicy Penne and Sausage. Picture it, feel it, make it :) This ONE POT SPICY SAUSAGE PENNE PASTA is what we need on a Monday and the first day back to work after losing an hour of sleep. I’m an exhausted mess this morning. I was still awake at 11:30pm and “rave” hours for me! Then 5:30 am rolls around and I can’t find the snooze button on the alarm because he’s up and calling first dibs on the shower - love you Frank (kisses) Can we go back please? I already miss that hour. Tell me your thoughts on daylight savings time because I.JUST.CAN’T!

One Pot Spicy Sausage Penne

Prep time: 15 minutes 
Cook time: 15 minutes 
Total time: 30 minutes

Ingredients 

  • 2 tbsp olive oil

  • 4 Italian Sausage links

  • 1 onion, diced

  • 2 cloves garlic

  • 1 tsp salt

  • 1/2 tsp black pepper 

  • 1/2 to 1 tsp red chili flakes

  • 1 (796mL) can diced tomatoes

  • 1 (680mL) jar tomato purée 

  • 1 1/2 cups low sodium beef broth 

  • 1 lb dried penne rigate

Topping Options

  • Chopped fresh basil 

  • Grated Parmesan 

Instructions 

  1. In a large pot, heat 2 tbsp olive oil on med-high heat. Add turkey sausage, searing for about 2-3 minutes per side. This step maintains the shape of the sausage when slicing it in the next step.

  2. Using tongs, remove sausage and when cool, slice into bite-sized pieces. Meanwhile, add the onion to the pot and sauté for 1-2 minutes until translucent and garlic and continue to cook for about a minute or until fragrant.

  3. Add sausage pieces back into pan, add salt, pepper and red chili flakes and sauté for another 2-3 minutes. Add diced tomatoes, tomato sauce and beef broth and bring to a boil, cover, lower heat to simmer and cook for 15 minutes.

  4. Add penne to the pot, stir and cover with a lid and cook, stirring occasionally, for another 8-10 minutes until pasta is al dente - fork tender and most of the liquid is absorbed.

  5. Plate your pasta, top with a generous amount of freshly grated parmesan and fresh basil

The Best Cheese and Broccoli Soup

Prep Time: 15 minutes

Serves: 3-4 decent sized bowls

INGREDIENTS

  • 1 tablespoon + 4 tablespoons unsalted butter, divided

  • 1 medium onion, finely diced

  • 1 clove garlic, minced

  • 1/4 cup all-purpose flour

  • 2 cups low-sodium chicken stock

  • 2 cups half-and-half cream

  • 3-4 cups broccoli florets and stems, diced into bite-size pieces

  • 2 large carrots, peeled, and sliced into thin rounds, about 1/16th-inch

  • 1 teaspoon kosher salt

  • Freshly ground black pepper to taste

  • 1/2 teaspoon paprika

  • 1/2 teaspoon dry mustard powder

  • pinch cayenne pepper

  • 8 - 10 ounces (280g) grated aged cheddar cheese, reserve a bit to garnish bowls

INSTRUCTIONS

  1. In a large heavy-bottom pot, add 1 tablespoon butter, the diced onion, and sauté over medium heat until the onion is soft and translucent, about 4 minutes.

  2. Add the garlic and cook about 30 seconds. Using a spoon, scoop the onion and garlic mixture from the pot onto a plate and set aside.

  3. In the same pot add 4 tablespoons butter, flour, and cook over medium heat for about 3 to 5 minutes, whisking constantly, until flour is thickened. this is called a roux and it’s a very important step do not skip or soup will not reach the desired thickness.

  4. Continue whisking and slowly add the vegetable stock. and repeat this process for the half-and-half cream.

  5. Stop whisking, and allow the mixture to simmer (not boil) over low heat for about 15 to 20 minutes.

  6. While mixture is simmering, chop the broccoli and carrots. After simmering 15 to 20 minutes, add the broccoli, carrots, the onion and garlic to the pot, mix to incorporate.

  7. Add the salt, pepper, paprika, dry mustard powder, and cayenne (if you are using it). Stir to combine.

  8. Stirring intermittently, while simmering soup over low heat for about 20 minutes, or until it has reduced and thickened.

  9. While soup simmers, grate the aged cheddar cheese. Do not use pre-grated cheese in zip top bags because that cheese is resistant to melting and will change the texture and taste of the soup. After 20 minutes, add grated cheese, reserving a small amount for garnishing the bowls when serving. Give the soup a couple of stirs, the cheese will melt in and transfer soup to bowls, garnish with reserved cheese, and serve immediately.

RECIPE NOTES AND TIPS

  • Store soup in an airtight container for 5 to 7 days in the fridge.

  • Milk alternative, whole milk or 2% milk will work but soup won’t be as creamy.

  • I recommend using fresh broccoli, but if you are tight on time a bag of frozen broccoli florets will work.

  • Keep this soup vegetarian by using vegetable broth in place of the chicken broth and milk alternative in place of the cream.

Recipe: Pumpkin Spice Doughnuts

Trick or Treat Yo’Selfto these PUMPKIN SPICE DOUGHNUTS today! I was inspired after seeing @wolfiesmom’ drool worthy post the other day and it got me thinking. The next question may seem random at first but keep reading and you’ll quickly understand.

If I could grant you one cullinary wish what would it be? Mine would be to cook along side Valerie Bertinelli as we make her famous love cake while piling up a 10 layer lasagna and sipping on a glass of Bertinelli Estate wine. Not that I’ve given this much thought ;) What would your Cullinary wish be? OH.MY.GOURD! Don’t be shy, I know you have one. I had to get one last pun in. Okay, I’m done - full recipe below :)


Pumpkin Spice Doughnuts

Serving: 12 Doughnuts

INGREDIENTS

Pumpkin Spice Doughnut batter:

  • 2 cups all-purpose flour

  • 1/2 cup dark brown sugar

  • 1 1/2 teaspoons baking powder

  • 2 teaspoons pumpkin spice

  • 1/4 teaspoon salt

  • 1/4 teaspoon baking soda

  • 1 cup pumpkin puree

  • 2 large eggs

  • 1/4 cup 2% milk

  • 1/4 cup unsalted butter, melted and cooled

Sugar – Pumpkin Spice Coating:

  • 1 cup sugar

  • 1 teaspoon pumpkin spice

  • In a separate bowl: 1/4 stick unsalted butter

INSTRUCTIONS

  1. Preheat oven to 325 degrees F.

  2. Spray a doughnut pan with cooking spray.

  3. In a large bowl, add flour, brown sugar, baking powder, pumpkin spice, salt and baking soda and stir to combine.

  4. Add the pumpkin puree, eggs, milk, and unsalted butter. Stir to combine; do not over mix. Scoop the batter into a large zip lock bag and cut the corner squeeze and fill each doughnut mold with batter and bake 8-11 minutes.

  5. To make Sugar – Pumpkin Spice Coating:In a small mixing bowl, add sugar and pumpkin spice until combined. Melt butter in the microwave and using a pastry brush, brush cooled donuts with butter and toss in the sugar - pumpkin spice mixture until coated.

  6. These Pumpkin Spice donuts are best when served right away. Keep in an airtight container in the refrigerator for up to 2 days.

Quick Chunky Beef Chili

Ingredients

  • 1 1/2 pound lean ground beef

  • 2 tablespoon olive oil

  • 1 medium onion chopped

  • 2 tablespoons tomato paste

  • 1 red bell pepper, diced

  • 1 teaspoon Worcestershire sauce

  • 1 teaspoon soy sauce

  • 1 1/2 teaspoons unsweetened cocoa powder

  • 2 tablespoons chili powder

  • 1 teaspoon garlic powder

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • 1/2 teaspoon cayenne pepper, optional

  • 1 (19 fl oz/540 ml) can red kidney beans, drained & rinsed

  • 1 (19 fl oz/540 ml) can pinto beans, drained & rinsed

  • 1 (28 fluid ounce) can fire-roasted diced tomatoes with juices

  • 1 cup beef broth * Salt & pepper to taste

toppings (optional)

  • Shredded cheddar cheese

  • Sour cream

  • Sweet Potato Tortilla Chips

Instructions

  1. Add olive oil to a large pot over medium-high heat. Sauté the onion for 5-7 minutes or until it's softened.

  2. Add the beef to the pot and cook for 5 minutes, breaking it up as you go, until brown

  3. Stir in the tomato paste, Worcestershire sauce, soy sauce, cocoa powder, chili powder, garlic powder, cumin, paprika, and cayenne pepper.

  4. Add the diced red pepper, beans and diced tomatoes, and beef broth. Increase heat to high and bring it to a gentle boil, then reduce heat and let it simmer for 20 minutes, stirring occasionally.

  5. Season with salt & pepper and serve with desired toppings and enjoy.

Recipe: Nacatole (Traditional Calabrese Cookies)

My parents were from the southern part of Italy - Calabria, and my Aunts/Cousins would make batches of these traditional cookies and deliver them to our home every Christmas.

I am now carrying on tradition and delivering them to you - virtually of course. I hope you enjoy them as much as we do.

Nacatole (An Italian Calabrese Traditional Cookie)

Serves: 45 - 55 wreaths

INGREDIENTS

  • 2 cups sugar

  • .6 large eggs

  • ¾ cup grapeseed oil

  • 5-6 cups all purpose flour

  • Grapeseed oil for deep frying

INSTRUCTIONS

  1. Add grapeseed oil to a large pot to about half full or a deep fryer and heat to 350 degrees F.

  2. In the bowl of a stand mixer add eggs and sugar. Using the whisk attachment whip until light and fluffy. Pour in the oil and mix to incorporate.

  3. Switch to the dough hook and begin adding flour on low speed until the dough pulls away from the sides of the bowl and easy to roll.

  4. Using 1 1/2 tablespoon scoop measure dough, roll into a long straw like shape, fold in half and twist. Connect the two ends to form a circular wreath.

  5. Using a slotted spoon, submerge one cookie at a time into the preheated oil and deep. The cookie should float to the top and turn golden in colour when ready.

  6. Use a slotted spoon to remove the golden wreath from the oil and place in a paper towel lined colander to cool. Allow to cool completely and enjoy! Cookies should be crispy on the outside, soft and fluffy on the inside.

NOTE

The traditional recipe uses vegetable oil, I use grapeseed oil because it’s a neutral-flavoured oil with a medium-high smoke point (390°F). You can use any oil as long as it has a high smoke point and neutral flavour, which means it won’t overwhelm or alter the taste of the cookies. Happy baking friends!

Recipe: Citrusy Amaretti

Ah, forget it! I don’t have control when it comes to these light and citrusy cookies. So freaking good!

Citrusy Amaretti

Prep Time: 10 minutes
Total Time: 25 minutes
Serves: 23 to 25 cookies

Ingredients

  • 3 cups medium ground blanched almonds , (do not use almond flour)
    2/3 cup granulated sugar, and additional 1/3 cup for coating the cookies before baking.
    1 tbsp orange or lemon zest
    2 large egg whites
    1 tsp almond extract
    25 whole almonds for garnish

Instructions

  1. Position rack in centre of oven and preheat to 350F. Line a large baking sheet with parchment or use a slip mat.

  2. Pour egg whites into the bowl of a stand mixer, add 2/3 cup sugar and using the whisk attachment beat until light and fluffy and white in colour.

  3. Remove the bowl from the stand mixer and add the almond extract. Using a silicone spatula or wooden spoon stir.

  4. Mix citrus zest and ground almonds together and add it to your egg and sugar fluff. Mix all the ingredients together just until combined. (Dough will be sticky.)

  5. Pour 1/3 cup granulated sugar into a small bowl and scoop almond mixture and roll into approximately 1 inch balls then roll around in sugar to coat.

  6. Place cookies on a prepared baking sheet, 1 inch apart, gently push a whole almond in the centre of the ball and bake until edges are golden brown, 10 to 12 min. Transfer to a rack to cool.

Recipe: One Bowl Greek Yogurt Pumpkin Bread

 “Beauty is in the eye of the beholder” and that’s how I would describe this photo of a One Bowl Greek Yogurt Pumpkin Bread. There may be slight imperfections on top but that crispy golden imperfect exterior adds an extra layer of flavour with every warm bite. It’s crispy on the outside and soft on the inside (perfect description of myself😁) PERFETTO! .

 One Bowl Greek Yogurt Pumpkin Bread

Ingredients

  • 1 medium-size ripe banana, mashed (1/2 cup)

  • 2 large eggs

  • 1 cup pumpkin pure

  • 1/3 cup plain greek yogurt

  • 1/4 cup melted coconut oil

  • 1/2 cup coconut palm sugar

  • 1/2 cup pure maple syrup

  • 1 tsp vanilla

  • 1 tsp ground cinnamon

  • 1/2 tsp ground ginger

  • 1/4 tsp ground nutmeg

  • 1/4 tsp sea salt

  • 2 cups all purpose flour

  • 1 tsp baking soda

  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350° (176ºC), and lightly grease a 9 x 5 (23 x 13 cm) bread pan. Set aside.

  2. Combine the flour, baking soda, cinnamon, and salt, stirring with a whisk.

  3. Place sugar and butter in a large bowl, and mix until well blended

  4. Add the eggs, pumpkin, yogurt and vanilla.

  5. Add flour mixture; mix until blended.

  6. Spoon batter into two loaf pans coated with cooking spray.

  7. Bake at 350° for 50-60 minutes until a toothpick inserted in center comes out clean.

Recipe: Roasted Acorn Squash

Just when I thought I had finished cooking for the day this little beauty caught my eye and I just had to bake it up. Perfect addition to any meal and it’s the easiest recipe around.

ROASTED ACORN SQUASH

INGREDIENTS

  • 1 acorn squash, washed

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • Salt and pepper to taste

INSTRUCTIONS

  1. Preheat oven to 400°F * Cut the squash in half, using a spoon scrape out the insides, and slice into 1/2" half moons.

  2. Add the olive oil, garlic powder, salt and pepper. Toss to coat. * Lay the squash out on a baking sheet. Bake for 30 minutes until fork tender and golden in colour.

Spicy Roasted Pumpkin Seeds

INGREDIENTS

  • 2 cups pumpkin seeds

  • 1 1/2 teaspoons olive oil

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon cayenne

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon paprika

  • parchment paper

INSTRUCTIONS

  1. Bake at 300 degrees for 40 minutes, taking them out and stirring/flipping halfway through. Let cool for a minute and enjoy!

Recipe: 5 Ingredient Almond Butter Cookies

5 Ingredient Almond Butter Cookies

Prep Time: 10 minutes
Cook time: 10 minutes
Total Time: 20 minutes
Serves: 16-20 cookies

INGREDIENTS

  • 1 cup almond butter, room temperature

  • 1 cup coconut palm sugar

  • 1 large egg, room temperature

  • 1 teaspoon baking powder

  • 1 teaspoon pure vanilla extract

INSTRUCTIONS

  1. Preheat oven to 350º with 2 oven racks closest to the centre. Line 2 cookie sheets with parchment paper.

  2. Combine all ingredients in a medium size bowl and stir to combine.

  3. Use a medium size cookie scoop to scoop out the dough (1.5 tablespoon balls), placing 8 cookies on each sheet (4 rows of 2 that are staggered).

  4. Bake for 9-10 minutes, until the edges are set and the centres are puffed. (The cookies will flatten and “crackle” as they cool) Cool for 10 minutes and enjoy! Cookies will keep in an airtight container for 1 week, or in the freezer for 1 year.

Chunky Slow Cooker Chili

INGREDIENTS

  • 1 1/2 teaspoons olive oil

  • 1 yellow onion, diced

  • 3 garlic cloves, minced

  • 2 pounds lean ground beef

  • 4 tablespoons tomato paste

  • 1 can red kidney beans, drained and rinsed

  • 1 can black beans, drained and rinsed

  • 1 can pinto beans, drained and rinsed

  • 2 red bell peppers, diced

  • 1 28-ounce can crushed tomatoes

  • 1 cup reduced sodium beef broth

  • 1 teaspoon cumin

  • 1 1/2 teaspoons unsweetened cocoa powder

  • 1 1/2 tablespoons chili powder

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon ground cayenne pepper

  • 1 teaspoon sea salt

  • 1/2 teaspoon ground black pepper

  • 2 teaspoons reduced sodium soy sauce 

INSTRUCTIONS

  1. Turn the Sauté or Browning feature on your slow cooker and heat the oil.

  2. Add the diced onion and cook until tender, about 3-4 minutes, add the garlic and continue to cook until fragrant.

  3. Add the lean ground beef and cook until browned, about 5 minutes, stirring to break it up as it cooks.

  4. Add the diced pepper, and continue to sauté until heated through, about 2 minutes.

  5. Add the tomato paste, stir in to loosen it up and cook for about 2-3 minutes.

  6. Turn off the Sauté/Browning feature. Add the crushed tomatoes, beef broth, beans, spices, soy sauce, unsweetened cocoa powder and stir to combine.

  7. Cover and cook on low for 7-8 hours or 4 hours on high

  8. Serve

 

Tips: The chili is delicious on the day of but the flavours intensify the longer it sits. So be prepared to enjoy a flavour explosion on the next day and the day after that. Also you can freeze this recipe into single portions or family meals for several months. Take them out of the freezer the night before, place it in the refrigerator to defrost and when you get home heat the chili in a pot and enjoy!

Sweet Potato Hash Breakfast Bowl

Ingredients

  • 2 tablespoons olive oil

  • 1 sweet potato, diced

  • 1/2 onion, diced

  • 1 garlic clove, crushed

  • 2 bell peppers, diced

  • Handful of crimini mushrooms, chopped

  • Handful of baby spinach (optional)

  • 1 teaspoon Italian seasoning

  • Salt and Pepper to taste

  • 4 large eggs

  • Hot chili flakes (optional)

Directions

  1. Wash and dice the sweet potato

  2. Add olive oil to a large pan, add sweet potato cover with a lid and cook for 10 minutes stirring occasionally.

  3. Chop the onion, garlic and add to the pan, stir and continue to cook uncovered.

  4. Wash and dice your bell pepper, add to the potato mixture.

  5. Chop mushrooms, add spinach, Italian seasoning, salt and pepper to the same mixture. Stir, cover with a lid and cook for 5 minutes.

  6. Uncover potato mixture, make 4 wells in the mixture with a wooden spoon and crack an egg into each well. Cover with the lid and cook for 2 minutes.

  7. Sprinkle hot chili flakes and Enjoy!
