Recipe: Steak Stir Fry

Steak Stir Fry

INGREDIENTS
1 lb steak (sirloin, skirt, or flank), thinly sliced into 1/4" strips against the grain
2 tbsp avocado oil, divided
2 cloves garlic, minced
2 - 3 carrots, peeled and thinly sliced
1 head broccoli, cut into florets
1 red bell pepper, cut into thin strips
2 cups snap peas
2 tbsp sesame seeds
1 tsp sea or kosher salt

Stir Fry Sauce
1/4 cup low sodium tamari or soy sauce
2 tbsp rice vinegar
2 tbsp fresh orange juice (1 orange, juiced)
2 tbsp honey
1 tbsp cornstarch
2 tsp sesame oil
2 tsp sriracha sauce (optional)
INSTRUCTIONS
Thinly slice the steak against the grain, 1/8" - 1/4" thick And set aside.
Combine all stir fry sauce ingredients in a bowl. Use a whisk to combine and set aside.
Heat a non stick skillet over medium heat. Add half the oil and add the steak to the pan, and stir fry until medium rare, about 3 minutes. Remove the steak from the pan and set aside.
Add the remaining oil to the pan add the garlic, mushrooms and sauté 1 minute. Add the carrots, broccoli and sauté 3 minutes, stirring frequently. Add the bell pepper and snap peas, to the pan and stir fry all vegetables an additional 3 minutes stirring frequently.
Add the steak back to the pan with the vegetables and pour over the stir fry sauce. Stir frequently, until the sauce thickens and the vegetables are fork tender, 3 minutes.
Remove from heat, stir in the sesame seeds, top with some cashews and serve.
