Sweet Potato Hash Breakfast Bowl

Ingredients
2 tablespoons olive oil
1 sweet potato, diced
1/2 onion, diced
1 garlic clove, crushed
2 bell peppers, diced
Handful of crimini mushrooms, chopped
Handful of baby spinach (optional)
1 teaspoon Italian seasoning
Salt and Pepper to taste
4 large eggs
Hot chili flakes (optional)
Directions
Wash and dice the sweet potato
Add olive oil to a large pan, add sweet potato cover with a lid and cook for 10 minutes stirring occasionally.
Chop the onion, garlic and add to the pan, stir and continue to cook uncovered.
Wash and dice your bell pepper, add to the potato mixture.
Chop mushrooms, add spinach, Italian seasoning, salt and pepper to the same mixture. Stir, cover with a lid and cook for 5 minutes.
Uncover potato mixture, make 4 wells in the mixture with a wooden spoon and crack an egg into each well. Cover with the lid and cook for 2 minutes.
Sprinkle hot chili flakes and Enjoy!
