Kale Smoothie With Pineapple and Banana

Ingredients
½ cup almond 2 cups stemmed and chopped kale (I used baby kale) 1 ½ cups chopped pineapple (fresh or frozen) 1 ripe banana, chopped
Directions
Combine the almond milk, ½ cup water, kale, pineapple, and banana in a blender and puree until smooth, about 1 minute, adding more water to reach the desired consistency.

Blackened Salmon

Blackened Salmon

Ingredients:
3 teaspoons cumin
3 teaspoons paprika
½ teaspoon cayenne
½ teaspoon garlic powder
¼ teaspoon dried thyme
½ teaspoon salt
Freshly ground black pepper, to taste
4 (4-ounce) salmon fillets, skin removed
2 teaspoons canola oil

Directions:
In a small bowl combine all the ingredients except the salmon. Coat the salmon fillets evenly on both sides with the spice mixture, pressing the mixture in so it sticks.

Heat the oil in a large heavy preferably nonstick skillet over high heat. Add the salmon and cook until blackened on one side, about 4 minutes. Carefully turn the fillets and continue cooking until the other side is blackened and the salmon is tender, flaky, but not overcooked, about another 4 minutes.

1 Tablespoon flax seed, ground
Healthy handful of spinach
¼ cup Vanilla Greek yogurt
1 cup unsweetened almond milk OR unsweetened coconut milk OR any kind of milk
Instructions

Place all ingredients in a blenders . Mix until smooth.

Salad in my home is served with almost every dinner. So to keep it exciting I like to change it up. Today’s salad is Shaved Fennel Salad. #WhatsForDinner

Yield: Serves 2-3
INGREDIENTS
1 fennel bulb, shaved paper thin with a mandoline
2 Tbsp extra virgin olive oil
1 Tbsp white balsamic vinegar
2 stalks celery, thinly sliced
1 Tbsp chopped flat-leafed parsley
½ fresh white onion, very thinly shaved
Salt and pepper to taste
METHOD
Gently toss all of the ingredients together and serve.

Roasted Potatoes, Carrots, and Brussels Sprouts

Ingredients
1/3 cup extra-virgin olive oil
3 medium carrots, cut into 1 ½-inch thick pieces
1 ½ cups Brussels sprouts, halved
4 cups red bliss potatoes, cut into 1 ½-inch thick slices
1 tablespoon dried oregano
1 tablespoon dried rosemary
1 teaspoon dried thyme
1 teaspoon dried basil
¼ teaspoon sea salt
2 tablespoons freshly ground black pepper

Directions
Preheat oven to 400 degrees F.

Grease an 11 by 17-inch rimmed baking dish with extra-virgin olive oil. Place vegetables in baking sheet and add the olive oil, dried herbs, salt and pepper. Toss well, evenly coating all the vegetables with the seasonings and oil. Add more oil if the vegetables seem dry

Spread the vegetables evenly on your large rimmed baking dish. Place on middle rack in oven and bake for 35 to 40 minutes.

½ cup plain greek yogurt
1 Tblsp light cream cheese
1 ½ Tblsp Blackberry Chia Seed Jam (recipe in an earlier post)
1 Tsp Agave or Honey (optional)

Directions
Mix all ingredients together until smooth.

Can be stored in an airtight container for up to 4 days

Almond Butter Currant Granola

I’ve become a granola making machine! You may want to double this recipe. It gets eaten that quickly.

Almond Butter Currant Granola
Ingredients
1 ½ cup Old Fashioned Oats
¼ cup chopped almonds
¼ cup unsweetened shredded coconut
2 tbsp Almond Butter
1 tblsp flax seed
1 tbsp coconut oil
3 tbsp honey
1 tsp vanilla
½ tsp sea salt
½ tsp cinnamon
¼ cup currants (or raisins or chocolate chips, you choose)

Directions
Preheat oven to 325 degrees.
Mix the oats, almonds, shredded coconut, flax seed, salt, cinnamon, and currents in a bowl.
In a microwave safe bowl add almond butter, coconut oil, and honey. Place in the microwave for 30 seconds or until melted. Remove from the microwave add vanilla and pour over dry ingredients.
Mix all ingredients until well combined. Scoop onto a parchment lined baking sheet and pack it down into a ½ inch thick layer. This will give you a chunkier granola, great for snacking.
Bake for 10-12, remove from oven and allow to cool before storing.

Pasta and Broccoli
Servings: 6 • Size: 1 ½ cups

Ingredients:
12 oz uncooked whole wheat pasta (use brown rice or quinoa pasta for gluten-free)
6 ½ cups fresh broccoli florets, no stems (jeep them on the small side)
3 to 5 cloves garlic, minced
½ cup (or more if too dry) low sodium chicken stock
¼ cup grated Parmesan cheese
2 tbsp olive oil, divided
Sea salt and fresh cracked pepper
Pepper flakes

Directions:

Bring a large pot of salted water to a boil. Add pasta and broccoli at the same time and cook according to pasta instructions for al dente. Drain pasta and broccoli.
Return the pot to the stove and set heat to high; add 1 tbsp olive oil, and garlic. Cook until golden, reduce heat to low and add pasta and broccoli back to the pot.
Mix well, add remaining olive oil, grated cheese, pepper flakes, salt and pepper to taste mixing well.
Add ½ cup of chicken stock and mix well adding more if needed and heat through.

Crockpot Vegetable Lentil Soup Recipe
Ingredients:
4 cups lentils, rinsed
32 oz beef broth (or veggie broth to make vegetarian)
2 cups water
1 medium yellow onion, diced
2 cups carrots, sliced
½ cup celery, sliced
28 oz can diced tomatoes, undrained
1 large sweet potato, diced
4-6 cloves garlic, minced
2-3 bay leaves (optional)
½ tsp salt
½ tsp black pepper

Directions:
Place all ingredients in a 5-6 quart crockpot. Cook on LOW for 7-8 hours or until vegetables are tender. Enjoy!

GOLDEN CAULIFLOWER WITH PINE NUTS AND CURRANTS

INGREDIENTS

¼ cup Pine Nuts
1 head Cauliflower (finely chopped)
½ cup Shallots (chopped)
¼ cup Currants
1 tablespoon Red Wine Vinegar
2 tablespoons Honey
Extra-Virgin Olive Oil
Salt and Freshly Ground Black Pepper
Parsley (chopped, to garnish)

Place the pine nuts in a large sauté pan on medium heat and toast the nuts, stirring frequently, until light golden in color (about 4 minutes). Remove the nuts to a dish and set aside.
Add a drizzle of olive oil to the sauté pan and turn the heat to medium-high. Once hot, add the cauliflower and season with salt and pepper. When the cauliflower begins to brown, give a stir and add the shallots. Continue to sauté the cauliflower until golden-brown and cooked through (about 3-4 minutes). Add the currants, red wine vinegar, honey and reserved toasted pine nuts. Cook for 2 more minutes. Finish with a drizzle of olive oil and season with salt and pepper. Garnish with chopped parsley and serve.
