The BEST Popcorn Recipe. The coconut oil makes it taste just like theatre popcorn. Give this healthy snack a try.
INGREDIENTS
1 ½ Tbsp coconut oil
½ cup popcorn kernels
1 3-quart covered saucepan
Sea Salt to taste

METHOD


1. Heat the coconut oil in a 3-quart saucepan on medium high heat until completely melted.

2. Put 3 or 4 popcorn kernels into the oil and cover the pan.

3. When the kernels pop, add the rest of the ½ cup of popcorn kernels in an even layer. Cover, remove from heat and count 30 seconds. This brings all of the other kernels to a near-popping temperature so they all pop at about the same time.

4. Return the pan to the heat. Once the popping starts, gently shake the pan by moving it back and forth over the burner. Try to keep the lid slightly ajar to let the steam from the popcorn release (the popcorn will be drier and crisper). Once the popping slows to several seconds between pops, remove the pan from the heat, remove the lid, and dump the popcorn immediately into a wide bowl.

5. Add sea salt to taste.

Note: If you add salt to the oil in the pan before popping, when the popcorn pops, the salt will be well distributed throughout the popcorn.

½ cup old-fashioned rolled oats
1 cup almond milk
½ to cup greek yogurt
1 teaspoon chia seeds
2 Tbsp sliced almonds
Fresh blueberries

Mix oats and almond milk in a bowl
Microwave on high for 3 minutes
Remove from microwave, stir in all remaining ingredients and enjoy!

Stove-Top Breakfast Potatoes

Looking for brunch ideas? Look no further. I’ve got a breakfast stove-top potato that will get them running to the kitchen ready to eat. WARNING: Do not leave the window open while cooking, you’ll have the neighbors knocking at your door with a fork in hand. They’re that GOOD!

Stove-Top Breakfast Potatoes

Ingredients
6 large red potatoes, scrubbed and cut into ½ inch cubes
1 small onion, chopped
1 red bell pepper, chopped
3 tablespoons olive oil
2 teaspoons salt
1 teaspoon pepper
¾ teaspoon dried parsley
½ teaspoon garlic powder
½ teaspoon cayenne pepper (optional, if you like a bit of heat)

Directions
1. Wash the potatoes well, and cut into ½ inch cubes. Put them into a glass microwave safe bowl, and microwave for 8-10 minutes.
2. Remove from microwave and allow to cool for a few minutes.
3. Heat a large pan on medium heat and add the red pepper. Cook for 3-4 minutes and add chopped onion. Continue cooking for another 2-3 minutes then add the potatoes and sauté. Add the seasonings to taste. Cook for about 6-8 minutes until the potatoes are soft and browned.

Petite Vanilla Bean Scones

Let me set the scene….Feet up on the couch, cozy blanket, a warm cup of tea in one hand and a petite vanilla bean scone in the other. Voilà! Instant bliss (good luck in stopping at just one.) Starbucks has nothing on these little drops of goodness. Enjoy!

Petite Vanilla Bean Scones
2 cups all purpose flour
1 ½ tsp baking powder
1/3 tsp salt
½ cup butter, room temperature
1/3 cup sugar
1 vanilla bean or 2 tsp vanilla extract
½ cup milk

Preheat oven to 400F. Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder and salt.
In a large bowl, cream butter and sugar until light. Cut vanilla bean in half lengthwise and scrape seeds out with a sharp knife. Add to butter mixture and beat to incorporate. Mix in half of the flour mixture, followed by the milk. Stir in remaining flour mixture until dough comes together into a firm, slightly sticky mass.
Divide dough into 5 equal pieces and roll into balls. Place on a lightly floured surface and flatten each ball to about ½ inch thick. After all balls have been flattened, cut each into quarters and arrange on prepared baking sheet.
Bake for 11-15 minutes, until scones are light golden at the edges. Cool on a wire rack before glazing.
Makes 20 small scones
Vanilla Bean Glaze
2 cups confectioners’ sugar
4 tbsp milk
2 tsp vanilla extract
small amount of vanilla bean (scraps from scones)
In a large bowl, beat together all glaze ingredients, adding in any leftover vanilla bean seeds (scrape the pod a second time) from the scone recipe. Mix until glaze is very smooth and has a pourable consistency. Add a few extra tablespoons of confectioners’ sugar if it is too thin, and an extra tablespoon of milk if it is too thick. Dip one side of each cooled scone into the glaze.

Salted Caramel Pretzel Pecan Chocolates

INGREDIENTS
40 Mini-pretzels, salted (unbroken)
40 Caramels, unwrapped
10 ounces, Baker’s Semi-sweet Chocolate
¼ teaspoon Cinnamon
1 teaspoon Vanilla
1 tablespoon Coconut Oil
40 Pecan Halves
½ cup unsweetened Shredded Coconut

INSTRUCTIONS

o Preheat oven to 325 degrees (F).
o Line a large baking sheet with parchment paper or a silicone baking mat. Arrange the pretzels in neat rows on the pan.
o Top each pretzel with an unwrapped caramel. Place the pan into the oven for 6-7 minutes, until the caramels are soft.
o Remove the pan from the oven, press a pecan half onto each caramel; set aside and cool completely.
o Melt the chocolate, coconut oil, cinnamon, and vanilla. Stovetop or microwave, whichever you prefer.
o When the pecan caramel pretzels have cooled, remove them from the baking sheet. Drop a few in the melted chocolate, stir them around to coat completely. Using a fork remove them one at a time, allowing excess chocolate to drip off. Repeat this process until all the pretzels have been coated with chocolate; transfer to a parchment paper lined baking sheet.

Tip: Get creative, top the wet chocolate with coconut, dip only the bottoms, drizzle chocolate over top or leave it plain. The possibilities are endless.

o Allow chocolate coating to cool completely before serving.

What is Maca? A root that belongs to the radish family. Grown in the mountains of Peru. Also know as the “Peruvian Ginseng”. A ½ teaspoon a day is a good way to start and a tablespoon a day is the average daily dose. I’ve read that taking too much is not recommended and may lead to adverse effects and throw your hormones out of whack. This one blogger recommends rotating a few days on and a few days off.

Slow Cooker Hearty Beef Stew

#WhatsForDinner ? I’ve got Stew for YOU! With cooler temperatures outside, comes comfort food and this is probably one of the tastiest Slow Cooker Beef Stew recipes around. Not because it’s one of my own but because we didn’t utter a word while eating for fear of disrupting the momentum of shoveling this delicious goodness into our mouths. You would have heard a lot of mmm….mmm….mmmm! (Licks spoon) 😊 if I had included audio with this pic. So here it is. Give it a try.
Slow Cooker Hearty Beef Stew

What You’ll Need
2-3 pounds Beef roast, Cut into chunks
¼ cup flour
3 tablespoons Olive oil
2 cups Low sodium beef broth
2-3 cloves garlic, minced
1 onion, chopped fine
4 tablespoons tomato paste
1 tablespoon soy sauce
1 teaspoon salt
1 teaspoon crushed red pepper flakes
¼ teaspoon black pepper
½ teaspoon dried thyme
1-2 bay leaves
4 carrots, chopped
4 Yukon Gold potatoes, peeled and cut into 1 inch pieces
2 stalks celery, chopped
1 cup frozen peas

Cooking Instructions
1. In a Ziploc bag add the flour and the meat chunks. Seal bag and toss the meat to coat with flo.ur.
2. Heat 2 tablespoons olive oil in a skillet.
3. Brown meat on all sides and add to slow cooker.
4. In the same skillet add 1 tablespoon olive oil, onions, and garlic. Cook until slightly browned about 6 minutes. Add tomato paste and cook, stirring frequently until paste begins to darken, about 2 minutes.
5. Slowly stir in broth, soy sauce, and bay leaves, bring to a boil. Transfer to slow cooker.
6. Add carrots, potatoes, celery,frozen peas, salt, black pepper, crushed red pepper flakes, and thyme. To the slow cooker.
7. Cover and cook on low for 8 to 10 hours. When done, stir and serve.

Making pasta sauce has never been easier. Another #crockpot recipe. Set it and forget it.
Crockpot Turkey Bolognese Sauce

1-2 tablespoons olive oil
16 oz (1lbs) raw ground turkey
1 small onion, diced
2 cloves garlic, minced
½ cup chopped mushrooms
8 cups (2 liters) crushed tomatoes
3 tsp dried oregano
2 tsp dried parsley
1 tsp dried basil
¼ tsp salt
¼ tsp pepper

In large frying pan add olive oil and ground beef, cook until meat is browned. Add mushrooms, onion, garlic and sauté until onion is tender.
Transfer ground turkey mixture to crockpot. Add crushed tomatoes, browned beef mixture, oregano, parsley, basil, salt and pepper.
Cover and cook on low for 6-7 hours or 4 hours on high.
