Cantaloupe and Mozzarella with Prosciutto and Basil
Ingredients
1 cantaloupe, halved and seeded
¾ pound bocconcini (bite-size fresh mozzarella balls)
2 tablespoons extra-virgin olive oil
¼ teaspoon red-pepper flakes
Coarse salt and ground pepper
1/3 pound thinly sliced prosciutto
¼ cup fresh basil leaves, torn
Directions
With a large melon baller, scoop melon flesh into a large bowl (or cut into bite-size pieces). Add bocconcini, oil, and red-pepper flakes; season with salt and pepper and stir to combine. Arrange prosciutto along edges of a large serving platter. Stir basil into melon mixture, transfer to center of platter, and serve.

Mmm…..donuts! These little bites of heaven take 5 minutes to prep, 10 minutes to bake, and 3 seconds to devour. C'mon have 1, or 2, what the hell, ½ a dozen with a tea hits the spot #yum

DONUT HOLES
2-¼ cups all-purpose flour (You can also use 1-cup whole wheat flour + 1-cup all-purpose flour)
1 cup sugar
1 teaspoon baking sod#
1 teaspoon baking powder
¼ teaspoon salt
2 eggs, lightly beaten
1 cup 2% milk
1 tablespoon pure vanilla extract
3 tablespoons butter, melted

VANILLA GLAZE
2 tablespoons milk
½ teaspoon pure vanilla extract
1 cup powdered sugar

Instructions

Preheat oven to 350.
Lightly grease a donut hole pan and set aside.
Combine flour, sugar, baking soda, baking powder and salt in a mixing bowl; whisk until well combined. Set aside.
In a separate mixing bowl, combine eggs, milk and vanilla; whisk until thoroughly combined.
Add melted butter and continue to whisk until well incorporated. Make sure your butter isn’t HOT!
Gently fold the egg-mixture into the flour-mixture. DO NOT overmix. If your donuts are dense, it is because you overmixed. Mix just until everything is wet and combined.
Pour batter into a squeeze bottle or a zip lock bag and snip the corner and squeeze the batter into the prepared muffin pan, filling each cavity about ¾ full.
Bake for 10 to 11 minutes.
Remove from oven and let stand 2 minutes in pan.
Transfer donut holes to a wire rack and let slightly cool.
Prepare the glaze.
Fill a bowl with hot water and set aside.
Place milk, vanilla and powdered sugar in a small saucepan; cook over medium heat, constantly stirring just until all is well combined and no lumps appear.
Remove from heat and set saucepan over the bowl filled with hot water.
Dip the donut into the glaze, one at a time and transfer back to cooling rack. You may want to place a piece of foil or paper towel underneath the cooling rack to catch the glaze that drips off

Lemon Cookies

1 (18.25 ounce) package lemon cake mix
2 eggs
1/3 cup grape seed oil
1 teaspoon lemon extract
1/3 cup confectioners sugar

Directions
1. Preheat oven to 375 degrees F
2. Pour cake mix into a large bowl. Sir in eggs, oil, and lemon extra until well blended. Drop tablespoonfuls of dough into a bowl with confectioners sugar. Roll them around until they’re lightly covered. Once sugared, put them on an ungreased cookie sheet.
3. Bake for 6-9 minutes. The bottoms will be light brown and the insides chewy.

These Nutella Croissants will blow.your.mind! Simple, delicious, ready in under ½ hour, and only THREE ingredients. Nutella, buttery pastry and you don’t even have to leave your home. It’s a win-win.

3-Ingredient Nutella Croissants

Ingredients
1 pkg puff pastry, thawed but still cool
¾ cup Nutella spread
1 egg + 1 tablespoon water, beaten

Instructions
Preheat oven to 450 degrees F. Line a baking sheet with silicone liners or parchment paper and set aside.
Sprinkle flour evenly onto a large, flat work surface. Unroll the puff pastry into a single layer. Cut each puff pastry sheet horizontally into thirds (I use the natural perforation seals from when they were folded). Then, cut each third of pastry in half diagonally to make twelve triangular pieces of pastry.
Spread a generous Tablespoon of Nutella onto the wider end of the triangular piece, leaving a ½ inch border. Begin rolling up the crescent from the widest piece into a crescent shape; place the croissants onto the prepared baking sheet.
Brush the tops and sides of the croissants with the beaten egg mixture. Bake for approx. 17-20 minutes or until golden in color. Remove from oven and serve immediately. Store leftovers in an airtight container for several days.

Tips: 1. For a quick reheat, place in the microwave for 20 to 30 seconds. It’ll taste like it just came out of the oven!
2. To thaw the puff pastry, take it out of the freezer the night before, place it in your refrigerator and it will be ready by morning.

Ultimate Chocolate Chip Cookies

YIELD: About 24 large cookies
PREP TIME: 10 minutes
COOK TIME: 15 minutes

Ingredients
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon fine sea salt
2 sticks (8 ounces or 1 cup) unsalted butter, at room temperature
½ cup granulated sugar
1 1/4 cups packed brown sugar
2 teaspoons vanilla
2 large eggs plus 1 egg yolk, at room temperature
2 cups semi sweet chocolate chips

Directions
Preheat oven to 350ºF. Line baking sheets with nonstick baking mats or parchment paper.
In a medium bowl combine the flour, baking soda, baking powder, and salt.
In the bowl of an electric mixer beat the butter, granulated sugar, and brown sugar until creamy. Add the eggs, one at a time, beating well after each addition. Add the vanilla Gradually beat in the flour mixture. Stir in the chocolate chips. Wrap dough in plastic wrap and refrigerate for at least 24 hours but no more than 72 hours. Tip: If you can’t wait to try these beauties place dough in the freezer for about an hour or so.
Let dough sit at room temperature just until it is soft enough to scoop. Divide the dough into 2-3 tablespoon sized balls and drop onto prepared baking sheets.
Bake for 12-15 minutes, or until golden brown. Cool for 2 minutes before removing to wire racks to cool completely.

POMEGRANATE CUCUMBER LEMON WATER……CHEERS!

Keeping hydrated is always at the top of my daily to do list but during the holidays I’ve been slipping. So to keep me on my hydration game I’ve made a batch of this antioxidant packed, immune boosting POMEGRANATE CUCUMBER LEMON WATER……CHEERS!

Ingredients
Half a cucumber, sliced
1 pomegranate, seeded @costco
½ a lemon, sliced
4-6 cups of water

Directions
Gently smash the pomegranate seeds using a mortar or anything I have on hand that will puncture the seeds
Slice the cucumber and lemon and add all the ingredients to a carafe, or what I have in the photo above a water infuser from @loblawson
Add 4-6 cups of water and refrigerate for at least 2-3 hours

Berry Banana Quinoa and Steel Cut Oats Breakfast Bake

Ingredients

½ cup quinoa, uncooked
½ cup steel cut oats, uncooked
3 medium very ripe bananas, sliced
1 + ½ cup blueberries
½ cup blackberries
¼ cup unsweetened coconut flakes
¼ cup pecan pieces
2 cups almond milk
2 large eggs or ½ cup egg whites (I used eggs)*
1 - 2 tbsp maple syrup
1 tsp pure vanilla extract
½ tsp cinnamon
Dash of salt
Cooking spray
Non-fat Greek yogurt, for topping (optional)

Directions

Rinse quinoa and oats with cold running water. Drain well and set aside. Get your fruits ready: slice bananas, wash and drain berries. Set aside.
In a medium mixing bowl whisk milk, eggs, maple syrup, vanilla, cinnamon and salt. Set aside.
Preheat oven to 375 degrees F and spray 8 x 8 square baking dish with cooking spray. Lay half of bananas, blueberries and blackberries in an even layer on the bottom. Using a spoon or spatula, spread rinsed quinoa and steel cut oats on top. Top with remaining banana and berries. Slowly pour liquid mixture in the corner of the baking dish without disturbing the set up. If you pour the liquid abruptly in the middle of the dish, all the fruit may float on top. You want evenly distributed fruits and sweetness in every slice. Sprinkle coconut flakes, pecan pieces and bake for 60 minutes uncovered.
Remove from the oven and let cool for 45 - 60 minutes. Cut into 9 slices and serve hot, warm or cold with a dollop of fat-free Greek yogurt if desired. You can also dig in with a spoon right away. The bake won’t be completely set but still delicious.

Storage Instructions: Refrigerate covered for up to 5 - 6 days.

The holidays are over and back to healthier eating. Starting off the new year with this Greek Yogurt Parfait with homemade Berry Jam. In the parfait, greek yogurt,Berry chia seed jam, honey nut granola)

Only takes 20 minutes to make and tastes amazing!

Blackberry Chia Seed Jam

Note:

1.The jam will keep in the fridge for up to 2 weeks.

2.the jam can be sweetened with honey, agave, or another sweetener of your choice.

3.You can also freeze the jam in an air-tight container.

Ingredients:
1 cup fresh blackberries
1 cup fresh blueberries
2-3 tablespoons agave syrup (depending on how sweet you like it)
3 tablespoons chia seeds
½ teaspoon vanilla extract (optional, I chose not to use it)

Directions:
1. In a medium-sized pot, bring the berries to a low boil, stirring frequently. Reduce heat to low and simmer until the berries soften, about 5 minutes. Lightly mash the berries with a the back of your stirring spoon. I prefer to leave some berries in chunks for texture.

2. Stir in the agave syrup and chia seeds. Cook the jam on low until it thickens, about 5-7 minutes. Make sure you stir the jam so it doesn’t sitck.

3. Remove the jam from heat and stir in the vanilla extract (optional). Let jam cool to room temperature. Pour in a glass jar or air-tight container and store in the refrigerator.

Honey Garlic Baked Chicken Wings

Ingredients
2 teaspoons Cornstarch
1 tablespoon Water
2 tablespoons Rice Bran Oil (coconut oil, grape seed oil or any high temp oil)
2 Garlic Cloves; minced
1 tablespoon Grated Fresh Ginger
½ teaspoon Onion Powder
¼ cup Low-Sodium Soy Sauce
½ cup Honey
2 Limes; juiced
1 tablespoon Sesame Oil
2 tablespoons Chili Flakes
2 pounds Chicken Wings; separated

Directions
Preheat oven to 350º F.
In a small bowl mix the cornstarch and water. Set aside.
Heat the Rice Bran Oil in a pan. Add the Garlic, Ginger and Onion powder, and cook until fragrant (a few seconds).
Stir in the Soy Sauce, Honey, Lime Juice, Sesame Oil and Chili Flakes. Whisk in the Cornstarch mixture and bring to a boil. Reduce to a simmer and cook for 3-4 minutes until sauce has thickened slightly. Remove from heat and allow to cool to room temperature.
Note: Sauce can be made in advance and stored in the fridge.
Season Chicken Wings with Salt & Pepper and place in a prepared (lightly coated with rice bran oil) rimmed baking dish. Bake for 20 minutes.
Pour sauce over wings and return to the oven for 20-25 minutes or until wings are cooked through.
Remove from oven, transfer to a serving dish and dig in.

Banana Oat Smoothie

I make the smoothie at night and pour it into a mason jar. Keep it in the refrigerator and in the morning you can just grab and go. It’s full of fiber, protein, AND keeps me full all morning!

Ingredients:
½ cup milk (or you can use almond milk)
½ cup French Vanilla Greek Yogurt
½ cup quick oats (rolled oats), soaked in ½ cup water
1 banana
2 tbsp peanut butter (or almond butter)
1 tbsp chia seeds
1 tbsp cocoa powder
Instructions:

1. Soak the oats in the water for 5-10 minutes. This softens them up and makes them easier to blend.

2. Add all the ingredients to a blender in the following order: milk, oats (with the soaking water), yogurt, peanut butter, banana (chopped), cocoa powder, and chia seeds.

3. Blend on high for 30 seconds – 1 minute, until everything is completely blended, smooth, and frothy. Serve chilled.

TANGY COLESLAW

INGREDIENTS:
- 1 bag of pre-made coleslaw

DRESSING:
- ¼ cup raw honey
- ¼ cup apple cider vinegar
- ¼ cup + 1 tablespoon light tasting olive oil
- ¼ tsp. sea salt
- ¼ tsp. dry mustard
- ¼ tsp. celery seed
- ¼ tsp. garlic powder
- ¼ tsp.ground black pepper

Directions:
1. Add dressing ingredients to a bowl and stir to combine.
2. Pour the dressing over the coleslaw mix and toss to coat. Cover and place in the refrigerator for at least half hour or until chilled.
